Eggplant is a rich vegetable with nutrients. It is filling and great alternative to many main dishes. Baking it is one of my favorite way to cook it. This recipe can be a great side dish to rice or pasta. Influenced by the Ukrainian cuisine <3.
The recipe is simply:
- 1 Eggplant
- 1/2 onion cut in cubes
- 1 tomato cut in cubes
- 4 tbsp of olive oil
- 1/2 tsp black pepper
- 1 tsp salt
- 1 garlic mined
- 1/2 tsp cumin
- 1/2 tsp paprika
- 1/4 vegan cheddar cheese shredded
Instructions:
Heat Oven to 400 F
Using a large skillet with cover, heat the olive oil to high heat. Add the onion, garlic once the oil is heated, then reduce the temperature to medium heat. Cook the onion and garlic till brown about 3 mins. Then add the tomato. Top off with the spices in the recipe and mix. Cover the skillet and cook for 6 minutes. Turn off the stove and set the toppings a side.
Slice the eggplant into half and lay over baking sheet. Insert in oven without the topping and let cook for 20 minutes. Then remove from oven and add the topping on top of it and garnish with cheese. Put again into the oven and let bake for 15 minutes. Remove from oven and ensure it cool for 10 minutes before you serve.
