Sicilian Mushroom Risotto

This recipe is inspired by the delicious Sicilian cuisine. Full of tomatoes, mushroom, spice flavor with slightly burned rice on the pan.

To make the Sicilian Risotto you will need to have the following: 

  • 1 Organic Tomato cut in cubes
  • 1 & 1/2 cups of arborio rice 
  • 1 Small Onion cut in cubes 
  • 2 tbsp unsalted vegan butter, melted 
  • 1/2 lb of cremini mushroom sliced 
  • 1 tsp salt & cumin 
  • 1 cube vegetable flavor, maggi 
  • 1/4 tsp black pepper
  • 2 tsp vegan parmesan  

 

Step 1: prepare the vegetable broth: Add 1/2 tbsp of butter to a pan on high heat, then add the cube of vegetable flavor followed by 2 cubs of water. Let cook until boil. reduce heat to medium 

Step 2: on medium heat, place the skillet (use one with lid) and add the butter. 

Step 3: Add the onion and let cook until slightly golden, then add the tomato. Stir for 5 minutes then add the mushroom on top 

Step 4: Add the spices on top and mix. Then add the rice and 1/2 cup of broth on top. Stir, then cover with lid. Let cook for 4 minutes   

Step 5: Stir every five minutes and add more broth when it dries. Always 1/2 cup until all finish. reduce heat to low when all water absorbed.  

Step 6: Leave rice on once side and cover until the rice is slightly burned on the bottom usually takes 5 mins after broth is absorbed. Stir and then add the cheese on top and mix. Remove from stove and set aside for 5 minutes before serving.
