Southern Green Sauté with lentils

This mediterranean sauté is sour and bold. The roasted lentils add more flavor to it. It’s full of nutrition with just few ingredients to assemble. Follow below for the details. 

To make this recipe you will need to have the following: 

  • 1 bag of southern greens (Spinach, collard, turnip) 
  • 1/4 of roasted lentils. Sold at Trader Joe’s
  • 1/2 tsp of salt
  • 1 cucumber cut in cubes 
  • 1 onion cut in cubes
  • 1/2 tsp of black pepper
  • 3 tsp virgin olive oil 

Step 1: In a sauce pan, add the olive oil to medium heat. Then add the onion and stir till it turns gold. Then add the southern greens and lentils to the pan. If you need to add more olive oil, do so. It is still healthy. Add another 2 tea spoons of olive oil. 

Step 2: After mixing the vegetables throughly add the spices all together and mix. Stir on medium heat for 5 minutes. Then put the heat to low and cover the pan. Let cook for another 5 minutes.   

When done, set aside to cool down. Add the cucumber on top and mix. Then serve
