Arabian Couscous with Veggies

Couscous is a Moroccan dish that you can prepare in different ways. I decided to use different vegetables that is different from what Moroccan would do. 

Serving for 4 people
Time to make: 30 mins

To make the recipe you will need to have the following:

  • 1 cup of couscous (sold at Trader Joe’s)
  • 1 chopped Green pepper
  • 1 chopped red bell pepper
  • 1 chopped onion
  • 1 sliced zucchini
  • 1/4 tsp ground pepper
  •  cup of boiled water,  
  • 2 tsp garlic power
  • 1 tbsp olive oil
  • Beans your favorite ( canned and all organic )

Steps to Prepare:

Step 1:

Using a sauce pan and on medium heat, add the olive oil and the onion. Simmer for few minutes and then add the green and red bell peppers. After two minutes add ground pepper, garlic, salt and then the zucchini. Stir every 5 minutes for 15 minutes or until you notice the veggies are cooked.

Step 1:

Add one cup of couscous and half cup of water. Make sure to stir the couscous and if you see the water is not enough add the second half. Stir and cover for 5 minutes. Uncover and stir again. Then cover for 2 minutes. Repeat the last step till water completely absorbed.  Serve with beans when ready.
