Eggplant Sauté

Thanksgiving is just few weeks away and you would want to show up with something new, vegan and different not the traditional sides dishes. Yet it is easy to make and has unique flavors. I used curry spice with  marinara sauce to give it that unique taste.

To make this recipe you will need to have the following: 

  • 1 red onion cut in cubes
  • 1 eggplant cut in cubes
  • 1 red bell peppers cut in small cubes 
  • 1/2 tsp of salt
  • 1/2 tsp of curry spice
  • 1 cup of marinara sauce 
  • 1/2 tsp of black pepper
  • 3 tsp virgin olive oil 
 

Step 1: In a sauce pan, add the olive oil to medium heat. Then add the onion and stir till it turns gold. Then add the eggplant and red bell peppers to pan. If you need to add more olive oil, do so. It is still healthy. Add another 2 tea spoons of olive oil. 

Step 2: After mixing the vegetables throughly add the marinara sauce and the spices all together and mix. Stir on high heat for 5 minutes. Then put the heat to medium and cover the pan. Let cook for another 5 minutes. Ensure to stir every 5 to 10 mins until it is fully cooked. Usually will take around half an hour total time to cook on the pan.   

When done, set aside to cool down. You can have this dish with zouq sauce.
