A savory healthy zucchini cake that you can eat on lunch or dinner. This is not a dessert, this is a savory cake. This recipe is the invention of dear person to me. Creativity with no limits.    

To make the cake you will need to have the following: 

  • 1/2 cup of Oat Milk
  • 4 zucchini shredded thinly
  • 1 bag of spinach blended
  • 1 tsp salt 
  • 1 tsp black pepper
  • 1/2 cup vegan mozzarella, shredded 
  • 1/4 cup of plant-based egg white


Step 1: Preheat oven to 380 F.


Step 2: Preparing the mixture: place Oat milk in a jug and mix everything -except mozzarella- together until the mixture is fully smooth. 

Step 3: Pour the dough into the baking dish and spread evenly

Step 4: On top place the shredded mozzarella and place in the oven for half an hour. 

Step 5: After half an hour, open the oven to see if the top if is crispy. If not, place for another 10 mins. When is over, take out of oven and let stay for 10 mins before cutting it.
