This recipe is inspired by the delicious Sicilian cuisine. Vegan Bechamel & mozzarella cheese with spicy spices. Four main vegetables added to the dish full of nutrition, Cauliflower, broccoli, zucchini & asparagus.
To make the Sicilian Baked Vegetables with Bechamel you will need to have the following:
- 1/2 whole Cauliflower
- 1 whole broccoli
- 1 bunch of asparagus
- 3 Zucchini
- 5 Vegan mozzarella cheese
- 2 tbsp unsalted vegan butter, melted
- 1 tsp salt & cumin
- 1/4 tsp black pepper
- 1 tbsp of rosemary spice
- 3 tbsp Olive Oil (for Bechamel Sauce)
- 2 tbsp of all purpose flour (for Bechamel Sauce)
- 2 cups of barista oat milk (for Bechamel Sauce)
Step 1: prepare the Bechamel Sauce: In a pot, add the oil to medium to high heat. Then in a minute, add the flour and stir. Add the milk on top it and whisk until the sauce is thick. When it reaches an accepted level of thickness, you can remove it and set it to cool. Now, you can use the sauce on the main dish.
Step 2: Preheat oven to 370 F.
Step 3: Cut cauliflower, broccoli in small pieces, slice the zucchini in circles. Asparagus can be cut in fourths
Step 4: Spread the vegetables in a baking dish, then pour the mixture over it , scatter with salt, black pepper and rosemary.
Step 5: Bake for 45 mins without adding the cheese. At the end of this time, open the oven, mix the vegetables and then add the cheese on top. Bake for another 15 mins.
Step 6: Leave for 5 mins to breath before serving.
