You should be able to quickly follow this recipe. The ingredients are easy buy and make. Of course focus on getting all organic. The cooking time is short, I always enjoy cooking vegetables for a salad mix. Check my website for other salad recipes.
To make this recipe you will need to have the following:
- I/2 onion, finely chopped.
- 1/2 cauliflower with single heads.
- 2 jalapeño sliced
- 1/2 yellow bell pepper cut in cubes
- 2 tbsp of Olive Oil
- 1/2 tbsp of each: ground black pepper, sea salt, and cumin powder.
- 1/4 of chickpeas can
- 1 Tomato cut in cubes
- 1 cup of quinoa
- 2 cups of water to make the quinoa
- Small cucumber cut in cubes
- Bunch of arugula
- 5 kalamata olives
Instructions to make the recipe:
Firs things first, let’s make the quinoa. It should be straight a simple. Heat 2 cups of water until boil in a pot and then pour the quinoa into the pot. Stir frequently and bring the heat to low when water is absorbed. Add some salt to it but not much. 1/2 tsp of salt should do. We will be adding more to the hot salad mix. When all water is absorbed. Turn it off and set quinoa a side to cool down. Leave it cool down for 15 mins.
Now let’s make the hot vegetables mix. In a skillet, add the 2 tbsp of olive oil and bring the stove to medium heat. Then add the onion. Stir the onion for about 3 mins and then add the yellow bell peppers, jalapeños, and cauliflower. Mix all together. If your skillet has a cover, cover it for 2 mins. Then open and stir every two mins for a total of 15 mins. Add the salt, pepper, and cumin to the mixture. Stir and then turn off the heat. Set a side to cool down for 10 mins.
The remaining ingredients are the cold salad that we will pour on top of the quinoa. So use a large bowl to start. Add the quinoa first to the bowl, it should be cooled down by then. Warm is fine. Then on top of the quinoa add all cold salad left and mix it. Then add the hot mixture we made earlier on top of it. Then gently mix all together. Add salt if salad does not taste salty. I usually add 1 tbsp at the end.
