When you want to stay healthy and light but also want to have something delicious and sweet at the same time, then you got to give this recipe a try. Caramelized mushrooms with pine nuts and arugula are now my new favorite salad. So quick to make, I am lazy and love quick delicious food. 

To make the salad you will need to have the following:

  • Bag of washed Arugula 
  • Sliced cremini mushrooms, one small box should be fine
  • Cherri tomatoes about 10 of them 
  • 1-2 sliced Avocados
  • 1/2 tsp of salt
  • 1/2 tsp of black pepper 
  • 1 cut in cubes onion
  • 6 tsp virgin olive oil
  • 1 tsp of honey
  • 3 tsp pine nuts
  • Sesame sauce (sold at trader Joe) or honey mustard sauce of your choice.     

Step 1:  in a high heated skillet add 3 tsp olive oil and onion and let simmer for 5 mins until the onion is crunchy and then set aside. 

Step 2: in a high heated skillet add 3 tsp olive oil and mushrooms and simmer until mushrooms are brown. This takes about 5 mins. At the end add 1 tsp of honey over the mushroom and simmer for 2 mins on medium heated skillet. Then set aside to cool. 

Step 3: Mix the arugula with tomatoes, add the crunchy onion, mushrooms, and pine nuts. Add the salt, pepper, and sesame sauce and mix softly. Place the avocados on the side and serve.
