Eggplant Pasta

 

 

This serving is for (4 persons)

You will need:

  • I box Pasta Farfalle
  • 1 eggplant, chopped in square shape
  • 1/2 onion, chopped
  • 2 tomato, diced
  • 1 garlic cloves, chopped
  • 3 tbsp olive oil
  • salt and freshly ground black pepper
  • 2 & 1/2 cups of water
  • 1 green pepper, chopped
  • Some parsley to garnish

You Will Do:

Add Chop onion and garlic to a pot with oil over medium heated stove. Stir till onion and garlic turn gold in color then add the green pepper, diced tomatoes, and eggplant.  Add the salt and black pepper lets cook for 25 minutes, and stir every 5 minutes.  Add the water and let cook for 5 minutes.

Add pasta and mix with all ingredients. let the pasta absorb the water and cook for 15 minutes. then reduce heat to low-medium and keep it cook for another 15 minutes. Pasta by them should have absorbed the water. Taste and add salt of black pepper if needed. when serving, make sure to garnish with parsley.

on the side, you can slice baguette and spread trader joe’s’ Zhoug sauce on top of it and put it in the oven to bake for 5 minutes.
