Have you ever thought that you could make pancakes from zucchini? It can be for breakfast. But I rather have it at lunch with Salad. This recipe is healthy and tasty at the same time. You can do this in less than 20 mins after you get it right the first time.
To make the pancakes you will need to have the following:
- 4 zucchini shredded using a shredder
- 3 tsp of flour (pick any flour you prefer)
- 1/2 tsp of salt
- 1/2 tsp of black pepper
- 3 tsp virgin olive oil
Step 1: In a pot, add the shredded zucchini, make sure the zucchini is not juicy. Squeeze it with your hand to remove the juice if needed. Some juice is fine but not much. Then add the flour over the zucchini, add the salt and pepper and mix thoroughly.
Step 2: Prepare a pan over low to medium heat. Add the olive oil to it. Once the pan is heated, add the zucchini. I usually make balls out of the zucchini and smash it smoothly over the pan to cook it. Each side would take 3 mins or 4. You will see how it looks once you flip it. Ensure that you cover the pan with a lid while the zucchini is cooking.
