Parsnip Soup

I highly recommend this healthy delicious soup. When I go on a detox, this is one of the soup that I make. It should be very straight forward to prepare and the ingredients are not hard to put together.

Serving for 2 people
Time to make: 10 mins

To make the salad you will need to have the following:

  • 1 onion chopped
  • 3 garlic gloves
  • 2 parsnips
  • 400g precooked white beans
  • Some Rosemary leaves
  • 1 bay leaf
  • 2 tbsp olive oil
  • water or vegetables broth

Steps to Prepare:

Step 1:

Add the olive oil and onion into a saucepan. Sauté the onion until they become translucent.

Step 2:

Add the diced parsnip, rosemary, bay leaf and simmer.

Step 3:

Add the white beans and the garlic gloves, salt and pepper and finish pouring the water or broth. Cover in half and stir gently for 20 – 25 minutes.

Fennel Carrot Soup

 

This serving is for (4 persons)

You will need:

  • 2 fennel bulb, sliced
  • 3 carrots, chopped
  • 1/2 onion, chopped
  • 4 garlic cloves
  • 30 g coconut oil or olive oil
  • salt and freshly ground black pepper
  • 2 cups of water
  • Some parsley to garnish

You Will Do:

Add Chop onion and garlic to a pot with oil over medium heated stove. Stir till onion and garlic turn gold in color.  Add the fennel and carrot and stir for 5 minutes. Add the water and season with salt and black pepper. Reduce heat to low-medium and let it cook for 20 minutes.

Then use a soup blender or regular blender to blend all together. let cook for a little, then taste for seasoning. add more pepper if you need to. Pour in a bowl and garnish with parsley.

Lentil Soup

This serving is  for (4 persons)

You will need:

  • 170 g green lentils
  • 1 L Vegetable broth
  • One red onion
  • 4 garlic cloves
  • 30 g coconut oil
  • 2 limes

You Will Do:

Rinse the lentils and blind. Chop onion and garlic. Squeeze the two limes. Melt the coconut oil 2 minutes in a saucepan. Cook the garlic for a minute and add the onion. Keep on fire for 5 minutes to melt. Enjoy!
