Eggplant Tahini with Beyond Meat

This recipe is my friends’ favorite one. I always get great feedback about it and requests to make it. I initially learnt to make this recipe with diary products but then I found the great mix to make it diary free and as tasty as it can be. This dish originated in Middle East and I learnt to make it from my mom (who till date makes the best version of it ) so consider this recipe a gift from me to your loved ones. This dish is made with a pan fried eggplant and flavored with jalapeño olive oil. You can top it off with Beyond meat patties if you wish and eat it with pitta bread. The taste will find its place to your heart.  

Here is what you need to start making this amazing dish: 

  • 2 gloves of garlic minced 
  • 1 lemon squeezed 
  • 3 chopped shallots
  • 5 Indian eggplants sliced vertically 
  • 7 tbsp virgin olive oil to fry the eggplant 
  • Vegan dip (you can get it from Trader Joe’s) or Diary free yogurt (nut based yogurt) 
  • 2 Beyond Meat Patties
  • 1 tsp salt 
  • 2 tbsp vegan mayonaise
  • 5 tbsp tahini  
  • 2 tbsp jalapeño olive oil, you can buy my recommend brand here 
  • Pitta bread 

Steps to Prepare:

Step 1: In baking plate, add the chopped shallots, vegan dip or vegan yogurt, vegan mayonnaise, garlic, salt, tahini, and mix all together. Then Place in refrigerator. 

Step 2: Medium heat skillet with olive oil, once the oil is heated, add the eggplant to fry. Flip the eggplant frequently until cook. Eggplant will become soft and brown. Remove eggplant and place on the side to cool down for 2 mins. Add to the mixture prepared in step 1. 

Step 3 (optional): Add the beyond meat patties to skillet and cook it per packaging instruction. Then slice the patties. Add on top of the dish. 

Step 4: Pour the jalapeño olive oil over the dish and serve with Pita bread.

Couscous Arugula Salad

This delicious Middle Eastern salad will feed and impress your guests. It’s full of nutrition that you can serve as main course if you wish. I always serve more dishes for my guest so I would recommend to serve this dish with hummus or with the eggplant tahini dish. The couscous will be cooked with vegetable broth and flavored with cinnamon. Then it will be added to the salad mix. Finally, we will add the basil flavord freshly squeezed olive oil on top of salad to give it the tasty touch.    

Serving for 4 people
Time to make: 35 mins

To make the salad you will need to have the following: 

  • A bunch of Arugula 
  • Half bunch of Parsley
  • 5 cucumbers cut in small cubes 
  • A mix of 8 chopped heirloom cherry tomatoes 
  • 3 chopped shallots
  • 1/2 orange bell pepper cut in small cubes  
  • 1/2 lemon 
  • 2 cinnamon sticks
  • Vegetable broth  (you can use vegetable stock cube to prepare the broth) 
  • 2 tbsp Basil Olive oil, you can buy the same fresh olive oil I used from here
  • 4 tsp virgin olive oil  
  • 1 and 1/2 cup of couscous
  • 4 cups of water
  • 1 tsp of salt        

Steps to Prepare:

Step 1:

In a pot, add the vegetable stock cube with 1 tbsp olive oil and simmer for 3 mins. Then add 4 cups of water till boil & the cinnamon sticks (about 10 mins). Place a side

Step 2:

In a skillet, add 2 tbsp of virgin olive oil to medium heated skillet and add the couscous to simmer. Pour the broth gradually over the couscous, one cup every 5 mins and stir. Ensure that the couscous absorb the broth before you add more. Add the salt to the couscous in between. Stir till the couscous becomes brown. Then squeeze the lemon at the end. This process should take about 20 mins. Keep the couscous to cool down for 5 mins.  

Step 3:

In a large salad bowl, mix all vegetables together. Add the cooked couscous on top of it, pour the basil flavored olive oil and mix. The salad should be ready to serve.

Basil Hummus

A homemade Middle Eastern Hummus recipe with a touch of basil. Easy to prepare.

I usually make my hummus plain with garlic and regular olive oil. Today, I decided to make the hummus with this new olive oil I discovered recently. The olive oil is flavored with basil that is freshly squeezed in California. The olive oil adds a great taste to the hummus dish. To make the hummus is a very easy and simple process. But you will need to carefully follow the simple steps below to get to the delicious homemade hummus. 

Serving for 4 people. Time to make: 15 mins 

 

To start off, you will need the following: 

  • Any blender 
  • 1 Garlic glove minced  
  • 1/2 Lemon 
  • 3 tbsp of Tahini 
  • 1 can of organic chickpeas 
  • 1 tsp of salt
  • 2 ice cubes
  • Basil to garnish  
  • 2 tbsp of olive oil flavored with basil (get your favorite brand from any olive oil store)

Steps to Prepare:

Step 1:

I usually start by boiling the peas in a pot with its water on high/medium heat for 5 mins. Then transfer to a bowl and pour cold water to easily peel off its skin. This is a preference. You don’t need to do this step. 

Step 2:

Add the peas, salt, squeezed lemon, and minced garlic to blend. Run the blender for a min till you see it becoming soft, add olive oil and blend for another min. 

Step 3:

Add the ice cubes and the tahini on top of it and let the ice melt. Then run the blender again for a min or 2. 

The Hummus should be ready by then. Transfer to a bowl and serve.

Lentil Salad with Sesame sauce

This salad is quick to make and full of nutrition. It takes about 10 minutes to prepare. This is one of my favorite light dinner meal. 

Serving for 2 people
Time to make: 10 mins

To make the salad you will need to have the following: 

  • Roasted lentils. Buy it ready made from Trader Joe’s. Frenchy and delicious
  • Cucumber shredded (2)
  • Tomatoes cut in cubes (2)
  • Parsley shredded small bunch fest size
  • Cilantro shredded small bunch fest size
  • Scallion thin sliced (3)
  • Yellow bel pepper shredded (1)
  • Yellow apple sliced (1)
  • olives (8)
  • olive oil (2) tbsp
  • sesame sauce from Trader Joe’s

Steps to Prepare: 

Step 1: 

Add all vegetables and apple together and then add the oil on top

Step 2: 

Add lentils and sesame sauce and mix again. Meal is ready to serve

Seaweed & Veggies Fried Rice

This serving is for (2 persons)

You will need:

  • One pack organic seaweed snack. view on Target
  • 3 broccolini (Baby broccoli) stalks, cut in half
  • 3 tbsp of soy sauce
  • 1 cup of rice
  • 1 chopped onion
  • 1/2 pound of mushroom sliced
  • Sesame oil
  • 1 green pepper & 1 red pepper chopped
  • Raisin

You Will Do:

First cook the rice separately. You will be making white plain rice so following the package to learn how to make it should be enough.

Using wok for cooking, start by adding the oil to medium heat. Add the onion, broccolini, mushroom, pepper and 1 tbsp soy sauce. You will need to cook the vegetables well within 15 mins to 20 mins and mix frequently. You can add the raisin, rice, and seaweed sheets towards the end. Add the remaining soy sauce tbsp and mix.

Broccoli & Tofu

Healthy lunch is made with broccoli and organic tofu, another Japanese dish by Veganster.

Serving for 2 people
Time to make: 25 mins

To make the salad you will need to have the following:

  • Firm organic tofu, 1 block cut in cubes
  • 1 broccoli head, cut in small pieces
  • 3 tbsp of soy sauce
  • 1 cup of rice
  • Chopped green onion
  • Sesame seeds and oil

Steps to Prepare: 

Step 1:

You will make a standard white rice. Follow the rice package to learn how to make it.

Step 2:

Dry out the tofu first. Using a wok for cooking, start by adding the oil to medium heat. Add the tofu, broccoli and soy sauce. You will need to cook the tofu well within 15 mins and the last five mins to fry each side of the tofu. You can add the green onion towards the end.

Serve both in one plate and add sesame seeds on top. Enjoy!!

Parsnip Soup

I highly recommend this healthy delicious soup. When I go on a detox, this is one of the soup that I make. It should be very straight forward to prepare and the ingredients are not hard to put together.

Serving for 2 people
Time to make: 10 mins

To make the salad you will need to have the following:

  • 1 onion chopped
  • 3 garlic gloves
  • 2 parsnips
  • 400g precooked white beans
  • Some Rosemary leaves
  • 1 bay leaf
  • 2 tbsp olive oil
  • water or vegetables broth

Steps to Prepare:

Step 1:

Add the olive oil and onion into a saucepan. Sauté the onion until they become translucent.

Step 2:

Add the diced parsnip, rosemary, bay leaf and simmer.

Step 3:

Add the white beans and the garlic gloves, salt and pepper and finish pouring the water or broth. Cover in half and stir gently for 20 – 25 minutes.

Arabian Couscous with Veggies

Couscous is a Moroccan dish that you can prepare in different ways. I decided to use different vegetables that is different from what Moroccan would do. 

Serving for 4 people
Time to make: 30 mins

To make the recipe you will need to have the following:

  • 1 cup of couscous (sold at Trader Joe’s)
  • 1 chopped Green pepper
  • 1 chopped red bell pepper
  • 1 chopped onion
  • 1 sliced zucchini
  • 1/4 tsp ground pepper
  •  cup of boiled water,  
  • 2 tsp garlic power
  • 1 tbsp olive oil
  • Beans your favorite ( canned and all organic )

Steps to Prepare:

Step 1:

Using a sauce pan and on medium heat, add the olive oil and the onion. Simmer for few minutes and then add the green and red bell peppers. After two minutes add ground pepper, garlic, salt and then the zucchini. Stir every 5 minutes for 15 minutes or until you notice the veggies are cooked.

Step 1:

Add one cup of couscous and half cup of water. Make sure to stir the couscous and if you see the water is not enough add the second half. Stir and cover for 5 minutes. Uncover and stir again. Then cover for 2 minutes. Repeat the last step till water completely absorbed.  Serve with beans when ready.

Baked Vegan Cauliflower Buffalo Wings

A great healthy dish that can be served as an appetizer. Follow these simple instructions and share if you like it.

Serving for 4 people 

Time to make: 30 mins

To start off, you will need the following:

  • 1 head of cauliflower
  • 1/2 cup almond or soy milk
  • 1 tsp of paprika
  • 1/4 tsp salt
  • 1/4 tsp ground pepper
  • 1/2 cup water
  • 1 cup gluten-free rice flour
  • 2 tsp garlic power
  • 1 tsp ground pepper
  • 1 cup any red hot sauce such as Frank’s hot sauce
  • 1 tbsp vegan butter
  • 2-3 tablespoons maple syrup

Instructions:

Using a baking tray, grease very well with oil. Preheat your oven to 450 F.  clean the cauliflower and cut them into small pieces. Mix the milk, water, flour and spices in a medium mixing bowl. We will add the hot sauce and butter later. Mix until the batter is thick and is able to coat the cauliflower without dripping. Add the cauliflower to the batter. Lay the cauliflower single layer on the baking tray.

Bake for 20 minutes until golden brown, flipping the florets over halfway through to get all sides golden brown. While the cauliflower is baking, prepare the ingredients for the sauce by mixing together see below. Remove from the oven. Toss the cauliflower in the sauce then using tongs, remove and place back on the baking sheet. Bake for another 5 minutes for the sauce to soak into the cauliflower. Remove from the oven and serve immediately with a vegan ranch dressing.

To make the sauce:

While the cauliflower are baking, in a small pot over high heat, mix the vinegar based hot sauce like Frank’s hot sauce, the vegan butter, 1 teaspoon garlic powder and 2-3 tablespoons maple syrup. Bring to a boil for 2 to 3 minutes. Remove from heat.

Eggplant Pasta

 

 

This serving is for (4 persons)

You will need:

  • I box Pasta Farfalle
  • 1 eggplant, chopped in square shape
  • 1/2 onion, chopped
  • 2 tomato, diced
  • 1 garlic cloves, chopped
  • 3 tbsp olive oil
  • salt and freshly ground black pepper
  • 2 & 1/2 cups of water
  • 1 green pepper, chopped
  • Some parsley to garnish

You Will Do:

Add Chop onion and garlic to a pot with oil over medium heated stove. Stir till onion and garlic turn gold in color then add the green pepper, diced tomatoes, and eggplant.  Add the salt and black pepper lets cook for 25 minutes, and stir every 5 minutes.  Add the water and let cook for 5 minutes.

Add pasta and mix with all ingredients. let the pasta absorb the water and cook for 15 minutes. then reduce heat to low-medium and keep it cook for another 15 minutes. Pasta by them should have absorbed the water. Taste and add salt of black pepper if needed. when serving, make sure to garnish with parsley.

on the side, you can slice baguette and spread trader joe’s’ Zhoug sauce on top of it and put it in the oven to bake for 5 minutes.
